What would a combination of a wood fire oven, locally sourced grains, and a penchant for quality give you? In Richmond, it's Sub Rosa. Its singular and sensational double deck wood fire oven is certainly a standout feature they boast, and it allows something as simple as a plain croissant to truly shine.
The Church Hill neighborhood has a handful of wonderful gems I'm eager to capture on this blog, but Sub Rosa is in a league of its own. Loaves of bread are made daily for purchase, from rye to rosemary sea salt. The pastries (namely their croissants) combine flavorful sweet and savory blends like pear and ricotta, chocolate and almond. In the bakery, lines of local coffee bags (Afterglow and Recluse) tempt the customer upon scanning the menu plastered on the wall. All the essentials are laid out meticulously.
I went into Sub Rosa on a rainy Sunday afternoon, and although their croissant options were limited that day, I left one satisfied customer. I had a plain croissant, whose buttery interior had me marveling aloud. The flaky and beautifully golden brown exterior made the most heavenly subtle crunch when biting in. Maybe the quiet pitter patter of the rain made me further romanticize the quaint nature of a bakery - but it's more likely that this place is just that special. To be entirely corny, Sub Rosa... is sublime.
